Rib-eye Steak Salad with Citrus-Jalapeno Relish
I first tried something like this recipe at a Publix supermarket of all places (You know I can’t pass up a free sample!). Some of the ingredients in the recipe bothered me (the sugar and cheese – b/c of my auto-immune disease), so I wanted to make my own version. I LOVE how flavorful this Ribeye Steak recipe is. We honestly have it almost every weekend! It’s perfect for grilling in the summertime!
I made this recipe for two people. We ended up picking up some big ol’ rib-eye steaks at Costco and this recipe could have fed three people. Your portion sizes really depend on how big your steaks are (and maybe how hungry you are!).
We keep our steak marinade pretty simple and just use Worcestershire sauce, but you can use your own favorite marinade and spices. Feel free to throw in some onion and garlic and/or use your favorite steak spice rub.
We marinated our steaks overnight in Worcestershire Sauce, but you could soak them for a few hours. After grilling the steaks, we slice them and place them on a bed of arugula or mixed greens.
The Citrus-Jalapeno Relish
The Citrus-Jalapeno Relish is my favorite part of this recipe! I could eat this stuff with a soup ladle. The ingredients include fresh orange segments, cilantro, shallots, fresh garlic, and diced jalapeno.
I like to spoon the relish over the steak and greens. There is usually a lot of orange juice in the bottom of the relish bowl (along with little bits of shallot, garlic, and jalapeno). I love to use that juice for a dressing for my greens. It’s so good!
This salad is gorgeous! And it tastes as delicious as it looks! With every bite, you get the taste of sweet oranges, spicy jalapeno, tangy garlic, and shallot. And, then you taste the cilantro…it is all a perfect complement to the steak and it is a flavor party in your mouth!
If you prefer, you could make a deconstructed version of this salad – with each element of the recipe separated. I like it plated any way I can get it!
If you don’t have the dietary issues that I have, you might want to try this salad with some pumpkin seeds and queso fresco or goat cheese. The pumpkin seeds add some texture and the cheese balances out the jalapenos.
